Vegetable Packed Chilli 

Vegetable Packed Chili

A vegetarian chili that is perfect to warm you up on chilly days.

Ingredients

 

  •  60ml canola oil
  • 1 yellow onion (160g), chopped
  • 1 tsp cayenne pepper (5ml)
  • 1 tsp chilli powder (5ml)
  • 1 tsp salt (5ml)
  • 1 tsp pepper (5ml)
  • 1 green bell pepper (180g) chopped

 

  • 1 red bell pepper (180g), chopped
  • 1 zucchini (180g), chopped
  • 90g frozen corn⁻
  • 3 carrots (180g), chopped
  • 1 (796ml) can of whole tomatoes
  • 8g coarsely chopped fresh coriander
  • 1 lime
  • 1 sachet of GMPro Mix-In added to an individual serving (see directions)

Directions

  1. In a stock pot, heat the canola oil on a medium setting. 
  2. Add the onion, cayenne pepper, chili powder, salt, and pepper. Sauté for 2-3 minutes.
  3. Add the bell peppers, zucchini, corn, and carrots. Sauté for another 5 minutes.
  4. Add the canned tomatoes and slowly stir. Reduce the heat and simmer on low for 20 minutes.
  5. Separate out your portion and add 1 sachet of GMPro Mix-In to cooled-down, ready-to-eat chilli.
  6. Mix until evenly distributed.
  7. Top with coriander and a spritz of freshly squeezed lime.
